Ingredients

* 300g good-quality milk chocolate, chopped
* 3 eggs, at room temperature, separated
* 2 tablespoons caster sugar
* 1 cup thickened cream
* 1/3 cup roasted hazelnuts, finely chopped
* grated dark chocolate, to serve

Method

1. Place milk chocolate in a large, heatproof, microwave-safe bowl. Microwave, uncovered, on MEDIUM (50%) for 1 to 2 minutes, stirring every 30 seconds with a metal spoon until melted. Set aside for 5 minutes to cool slightly.
2. Add egg yolks to chocolate and stir until well combined.
3. Using electric hand beaters, beat eggwhites in a bowl until soft peaks form. Sprinkle sugar over eggwhites. Beat until thick and glossy. Using a large metal spoon, fold half the eggwhite mixture into chocolate mixture until combined. Gently fold in remaining eggwhite mixture.
4. Whip cream until soft peaks form. Fold cream and hazelnuts into chocolate mixture until combined. Spoon mixture into twelve 1/3-cup capacity glasses. Place on a tray and cover with plastic wrap. Refrigerate for 4 hours or until firm. Top with grated chocolate just before serving.

This is something I discovered in my college canteen when they were totally out of food. All they had was chips and other assorted munchies and curd.

I dunked Bingo’s Achari Masti (the red packet) in curd which makes a really nice dip. Now most of my friends are addicted to it!

Toasty Paneer Sandwich

Toasty Paneer Sandwich

Ingredients:

  • 1 cup crumbly cottage cheese/ paneer
  • 2 tbsps butter
  • 1 tsp cumin seeds
  • 1 large onion chopped very fine
  • 2 green chillies chopped very fine (optional)
  • 2 medium tomatoes chopped fine
  • 1/4 tsp tumeric powder
  • 1/2 tsp red chilli powder (optional)
  • Salt to taste
  • 8 slices fresh, soft sandwich bread of your choice
  • Butter

Preparation:

  • Heat a pan on a medium flame and add the butter to it. Allow to melt and then add the cumin seeds. When they stop spluttering, add the green chillies and onion. Fry till the onion is soft.
  • Add the tomatoes, turmeric powder, red chilli powder and salt to taste. Stir well. Cook for 2 minutes stirring frequently.
  • Add the paneer  and mix well. Stir fry for 3-4 minutes and then turn off fire. Allow to cool a little.
  • Lay the slices of bread on a clean cutting board and butter. Now put a generous amount of the prepared paneer mixture on 4 of the slices. Spread to cover entire slice. Top with another buttered slice.
  • Grill or toast the sandwich till crispy and golden. This is especially nice when done in a sandwich toaster which seals the edges, preventing the paneer from falling out later.

Ingredients:

  • 4 slices of a sandwich bread of your choice
  • Butter
  • 4 tbsps Mango Pickle (you can use store-bought Mango Pickle)
  • 2 slices cheese (the pre-packaged kind!)
  • 1 cucumber cut into thin slices
  • A few leaves of lettuce (washed and torn into pieces the size of the bread)
  • Salt and pepper to taste

Preparation:

  • Lay the slices of bread on a clean cutting board and butter the surfaces.
  • Now spread a generous layer of Mango Pickle - finely chop any large mango pieces before spreading - on the slices of bread.
  • Add cheese slices and layers of lettuce and cucumber on the bread as per preference.
  • Top with another buttered slice. Trim edges if preferred. Toast/ grill if desired.
  • Cut into half and serve.

•    Begin your day with a healthy breakfast. 6-8 meals per day would be sufficient enough to keep you driven.
•    For some time, manage to steer clear of junk and fried food.
•    Want to snack? Gorge on fruits, veggies, salads, some biscuits, milk, etc.
•    Avoid sugary foods and drinks
•    Search for the food options rich in Vitamin B and C, calcium, magnesium and potassium.
•    Dark-green and yellow veggies should be included, for their phytochemicals components which modulate stress.
•    Drink water in good amount.
•    Depend on fish, flax and sesame seeds for healthy body and sharp brain.

Noida food vans on a comeback

Noida Authority board is all hailing and smiling, for its few recent moves have brought a smile on the faces of locals. When Suket Kumar Singh, an employee of a private firm based in Noida learnt mobile food vans are once again being allowed on the city roads, his happiness knew no bound. Apparently, a foodie, he was facing a real hard time once these food vans were disallowed for the dishes being prepared in grubby conditions. But, like others he has got a reason to rejoice after the NA board showed a green signal to the stationing of mobile vans near schools, institutions and corporate houses. As decided in the 158th meeting of NA board, food vans will also be allowed to set up shop in residential and industrial corners of the city.

On the exciting comeback of his favourite food van, Suket said,” I was missing its spicy Hakka chowmein, veg manchurian and those tasty chicken momos for long, but finally I can spice up my taste buds to savour all these in few days to come and will soon enjoy a sabbatical from the conventional ghar ka khaana. As soon as I found out mobile food vans will be back on the city roads, I started drawing my wishlist.”

Whether food vans will be parked at the same location is a matter of free will of the van owners, as they are given the right to decide strategic locations of their makeshift outlets. Such mobile vans will be set up across the city as per the need and demand of the area. However, NA has taken the task of ensuring disruption-free placement of mobile vans earnestly. Owners should station their mobile food joint at a place where it doesn’t disrupt traffic or cause inconvenience to public. Mobile van owners would be required to pay Rs 120 per square meter as fee to NA. As per the plan, these vehicles will be leased out for a period of 12 months and will be subject to renewals only twice.

With this major grant, many food buffs would now snap the opportunity to lovingly lighten their wallets and savor their favorites within a reasonable price range.

Though allowing food vans on streets has made many happy, there are few who still think NA ahould reconsider its decision. According to Shikha Garg, an employee of a Noida-based firm, “I used to see my friends having food from one of such mobile van, prepared in extremely unhygienic conditions, it was a house of flies and mosquitoes.Imagine, you pay money and share your food with surrounding flies and mosquitoes, how dreadful?. I think it is always better to spend few hundreds more and take lunch from a hygienic place. These food vans are a breeding place for deadly diseases”. Criticizing this recent decision of NA board, many feel it is as bad as giving people a right to take drugs. “Either put stringent laws at place, for keeping hygiene and cleanliness up standard or do not bring such vans in surroundings”, claimed Shikha.
